Cocoa

In plain wordsCocoa is the processed product of the cacao bean — fermented, dried, roasted and ground to make chocolate, cocoa powder and cocoa butter.

Walk through a German Christmas market and follow your nose: Lebkuchen, chocolate-dipped fruit, steaming mugs of Kakao. Every one of those smells starts on a farm near the equator, with cocoa.

German buyers ask

Straight answers first, then the story behind them.

How do you make hot cocoa?
Short answerMix 2 tbsp cocoa powder with 2 tbsp sugar and a splash of hot milk into a paste, then whisk in 250 ml hot milk.

The paste step stops lumps. Add a pinch of salt and vanilla. Dutch cocoa gives a darker, smoother cup.

How to make a hot cocoa drink?
Short answerHeat milk until steaming, whisk in cocoa powder and sugar (about 1:1), and serve hot.

For cafés, pre-mix cocoa, sugar and milk powder so baristas just add hot water or milk.

Do cocoa contain caffeine?
Short answerYes — cocoa contains a little caffeine, around 10–15 mg per tablespoon of powder.

That is roughly a tenth of a strong coffee.

Do cocoa have caffeine?
Short answerCocoa has small amounts of caffeine and more theobromine, a milder stimulant.

Theobromine is why cocoa feels warming rather than jittery.

Does cocoa contain caffeine?
Short answerYes. A mug of hot cocoa typically has a few milligrams to about 20 mg of caffeine, depending on how much cocoa is used.

Dark chocolate has more, because it contains more cocoa solids per gram.
