Cocoa

In plain wordsCocoa is the processed product of the cacao bean — fermented, dried, roasted and ground to make chocolate, cocoa powder and cocoa butter.

Every February, Japan buys a mountain of chocolate for Valentine’s Day — then gives back again on White Day in March. Behind those beautifully wrapped boxes is one humble ingredient: cocoa, grown thousands of kilometres away on farms like those in Cameroon.

Cocoa beans

In plain wordsCocoa beans are the fermented, dried seeds of the cacao tree — the raw material of all chocolate.

Japanese bean-to-bar shops in Tokyo and Kyoto treat beans like wine grapes: origin, fermentation, roast curve. Cameroon beans bring a bold, deep profile and a reddish color that makes them stand out in a tasting flight.

Cocoa powder

In plain wordsCocoa powder is the ground cocoa solids left after most of the cocoa butter has been pressed out.

In Japan, a mug of pure cocoa (ココア) is a winter comfort. Beverage makers need powder that disperses fast and tastes smooth — usually an alkalized grade. We ship both natural and alkalized powders to spec.

Cocoa nibs

In plain wordsCocoa nibs are small pieces of roasted cocoa bean with the shell removed.

Crunchy, sugar-free and full of character, nibs fit Japan’s love of texture — sprinkled on granola, folded into bread at the neighborhood bakery or blended into matcha desserts.

Cocoa husk

In plain wordsCocoa husk is the thin outer skin around each cocoa bean, removed after roasting (the word is also used for the pod’s outer husk).

Nothing goes to waste in Japanese manufacturing philosophy. The thin husk peeled from each roasted bean becomes fiber, fertilizer or biomass — a quiet sustainability story buyers can tell.

Cocoa shell

In plain wordsCocoa shell is the papery shell separated from roasted beans during winnowing, sold as a by-product for mulch, feed, fuel, fiber and tea.

Cocoa shell tea is a gentle, chocolate-scented infusion that suits Japan’s tea culture. Shells are also used as garden mulch and in feed and fuel blends.

Cocoa butter

In plain wordsCocoa butter is the natural fat pressed from cocoa liquor; it is solid at room temperature and melts near body temperature.

Japan’s cosmetics shelves are famous worldwide — and cocoa butter is a quiet hero in balms and creams. For chocolatiers, it gives that perfect snap on a Valentine’s bonbon.

Cocoa plant

In plain wordsThe cocoa plant (Theobroma cacao) is a small tropical tree that grows its pods directly on its trunk and branches.

Cacao can’t grow in Japan’s climate — it needs equatorial heat and shade. That makes a reliable origin partner essential for every Japanese chocolate brand.

Japanese buyers ask

Straight answers first, then the story behind them.

Is cocoa powder healthy?
Short answerPlain, unsweetened cocoa powder is a nutritious ingredient — rich in fiber, iron, magnesium and flavanol antioxidants, with little sugar or fat.

The “health” depends on what goes with it. Pure cocoa is good; cocoa with lots of sugar is a treat. Natural (non-alkalized) powder keeps more flavanols.

Does cocoa contain caffeine?
Short answerYes, a small amount — about 10–15 mg per tablespoon of cocoa powder, much less than coffee.

Cocoa’s main stimulant is theobromine, which is milder and longer-lasting.

Does cocoa powder go bad?
Short answerIt rarely spoils but slowly loses flavor; stored dry and sealed, it keeps about two to three years.

Humidity is the enemy — keep bags sealed in a cool, dry store. Every BV bag carries a lot code and best-before date.

Is cocoa good for pregnancy?
Short answerModerate amounts of cocoa are generally considered fine in pregnancy, but it contains caffeine, so total daily caffeine should stay moderate.

Many health bodies suggest keeping caffeine under about 200 mg a day in pregnancy. Always follow your doctor’s advice.

What is cocoa butter?
Short answerCocoa butter is the natural fat pressed from cocoa beans — pale yellow, solid at room temperature and melting near body temperature.

It gives chocolate its snap and melt, and is widely used in skin care. It contains no dairy.
