/spain · Cocoa Buyer’s Guide

Spain brought chocolate to Europe. We bring the cocoa.

Five centuries ago, cacao crossed the Atlantic and landed in Spain first. Today, from churrerías in Madrid to chocolate factories in Villajoyosa, Spain still runs on cocoa — and BV ships it in bulk from Cameroon.

Cocoa

In plain wordsCocoa is the processed product of the cacao bean — fermented, dried, roasted and ground to make chocolate, cocoa powder and cocoa butter.

When Spanish explorers returned from the Americas in the 1500s, they carried a strange bitter drink. The Spanish court sweetened it with sugar and cinnamon — and for decades kept the recipe close. Europe’s love affair with cocoa started right here.

Spanish buyers ask — preguntas frecuentes

Straight answers first, then the story behind them.

Is cocoa a fruit?
Short answerCocoa comes from a fruit. The cacao pod is a fruit, and cocoa beans are its seeds.

Inside the pod, the seeds sit in sweet white pulp that tastes like lychee and lemonade. Farmers ferment seeds and pulp together — that pulp is what starts the chocolate flavor.

How do you make cocoa powder?
Short answerFerment and dry cocoa beans, roast them, remove the shells, grind the nibs into liquor, press out the butter, then mill the pressed cake into powder.

For Dutch cocoa, the nibs or powder are also treated with an alkali. Every step happens before the powder reaches your factory — we handle it at origin.

How to make ganache with cocoa powder?
Short answerHeat 200 ml cream with 50 g sugar, whisk in 40 g cocoa powder until smooth, then stir in 40 g butter off the heat.

A cocoa-powder ganache is lighter than one made with chocolate. Use Dutch cocoa for the darkest, smoothest result, and let it cool before piping.
