What Happens

Ripe cocoa pods are harvested by hand from Theobroma cacao trees. Only fully ripe pods are selected — identified by colour change from green to yellow, orange, or red depending on variety. Pods are cut from the tree using machetes and collected. Each pod is then broken open (pod breaking) to extract the cocoa beans surrounded by white mucilage pulp. The beans and pulp are separated from the pod shell and collected for fermentation.

How is cocoa powder made from cocoa beans?

Cocoa powder is made through a multi-stage process: (1) Cocoa beans are fermented and dried to develop flavour. (2) Beans are roasted at 120–150°C. (3) Roasted beans are cracked and winnowed to remove the shell, producing cocoa nibs. (4) Nibs are ground in mills — friction melts the cocoa butter, producing liquid cocoa liquor. (5) The liquor is hydraulically pressed to extract cocoa butter, leaving cocoa cake. (6) The cake is milled into cocoa powder. Alkalized (Dutch-process) powder undergoes additional alkali treatment to raise its pH from 5.0–6.0 to 6.8–8.1.

How is cocoa butter extracted from cocoa beans?

Cocoa butter is extracted by hydraulically pressing cocoa liquor — the liquid produced by grinding roasted cocoa nibs. High pressure forces the liquid fat (cocoa butter) to flow out of the mass. The remaining compressed solid is cocoa cake. The extracted cocoa butter is then filtered, clarified, and depending on the target grade — food, cosmetic, or pharmaceutical — deodorized to remove the natural cocoa aroma. Fermentation is the most critical stage in developing cocoa’s flavour. During the 5–7 day fermentation process, the white mucilage pulp surrounding the beans is broken down by naturally occurring yeasts and bacteria. This generates heat (temperatures reach 45–50°C inside the heap) and produces chemical reactions within the beans that create the flavour precursors — amino acids and reducing sugars — that develop into the characteristic cocoa flavour during roasting. Unfermented cocoa beans lack these precursors and produce a harsh, astringent, uncharacteristic flavour in the finished product.

What is the difference between natural and alkalized cocoa processing?

Natural (non-alkalized) cocoa powder is produced by milling cocoa cake without any chemical treatment — the result has a pH of 5.0–6.0, a lighter brown colour, and a sharper, more acidic flavour. Alkalized (Dutch-process) cocoa powder undergoes treatment with an alkaline solution (typically potassium carbonate) either before pressing (applied to the nib or liquor) or to the cocoa cake before milling. This raises the pH to 6.8–8.1, darkens the colour, mellows the flavour, and improves dispersibility in water — making it preferred for beverage and dark baked goods applications.

Cocoa beans are typically roasted at 120–150°C for 20–40 minutes depending on the desired flavour profile and the downstream application. Roasting temperature and time significantly affect the final flavour of the cocoa — lower temperatures and shorter times produce milder, more acidic notes; higher temperatures produce deeper, more bitter flavours. Winnowing is the process of separating the cocoa shell (husk) from the cocoa nib after the roasted beans have been cracked. A controlled air stream carries away the lightweight shell fragments while the heavier cocoa nib pieces fall into a collection channel.
