A cocoa powder SDS tells you how to handle the product safely, while a COA tells you what is actually in each lot. Buyers also ask for a technical data sheet and a residue statement. This guide explains each document and lists typical specification ranges for cocoa powder, cocoa butter, cocoa liquor, cocoa mass and cocoa nibs.
SDS vs MSDS vs Technical Data Sheet vs COA
These four documents are often confused. However, each one answers a different question.
| Document | What it answers |
|---|---|
| SDS (Safety Data Sheet) | How to store, handle and transport the product safely. It follows the 16-section GHS format. |
| MSDS (Material Safety Data Sheet) | The older name for the same document. Today, “cocoa powder MSDS” and “cocoa powder SDS” mean the same thing. |
| Technical data sheet (TDS) or specification | What the product should be: the agreed ranges for fat, moisture, pH, fineness and microbiology. |
| Certificate of Analysis (COA) | What one specific lot actually tested at, compared with the specification. |
In short, the specification sets the target, the COA proves each shipment hits it, and the SDS keeps your warehouse and production staff safe.
What Is in a Cocoa Powder SDS?
Cocoa powder is generally not classified as a hazardous substance. Even so, a proper SDS covers all 16 sections. The most useful points for buyers are:
- Dust: fine cocoa powder can form combustible dust in the air, so dust control and good housekeeping matter.
- Storage: keep it cool and dry, away from strong odours, because cocoa absorbs smells and moisture.
- Handling: avoid creating dust clouds, and use standard protective equipment in dusty areas.
- Transport: cocoa powder is normally not regulated as dangerous goods.
Typical Cocoa Product Specifications
The ranges below are typical for the trade. They are a guide only; every contract should state its own limits.
| Product | Typical key specifications |
|---|---|
| Natural cocoa powder | Fat 10–12% or 20–22%; moisture max. about 5%; pH about 5.0–5.8; fineness 99% or more through 75 microns |
| Alkalized cocoa powder | As above, but pH about 6.8–8.0 or higher, depending on colour (light, medium, dark) |
| Cocoa butter | Free fatty acids max. 1.75% as oleic acid; moisture max. about 0.1–0.2%; iodine value about 33–42 |
| Cocoa liquor / cocoa mass | Fat about 50–56%; moisture max. about 2%; shell max. 1.75% (fat-free dry basis) |
| Cocoa nibs | Fat about 50–55%; low moisture; shell content as low as possible |
| Cocoa beans | Moisture max. about 7.5%; bean count per 100 g; cut test for mouldy, slaty and insect-damaged beans |
For powders and liquor, microbiology is usually specified as well. A common pattern is total plate count max. about 5,000 cfu/g, yeasts and moulds max. about 50–100 cfu/g, and Salmonella absent in 25 g.
Melting Point of Cocoa Butter and Pure Cocoa Mass
Cocoa butter melts over a narrow range, roughly 31–36 °C. That is why chocolate melts in the mouth but stays solid on the shelf. Pure cocoa mass contains about half cocoa butter, so it behaves the same way: it is solid at room temperature, softens above about 30 °C and is fully liquid a few degrees higher. Factories therefore melt cocoa mass blocks and hold liquid liquor in heated tanks.
For storage, keep cocoa butter and cocoa mass below about 20 °C to avoid fat bloom and softening during transport.
What Is a Residue Statement for Cocoa Products?
A residue statement confirms that the product meets the pesticide limits of the destination market. In the EU, those are the maximum residue levels under Regulation (EC) No 396/2005. In addition, EU buyers often ask for cadmium and PAH results under Regulation (EU) 2023/915. For example, the EU limit for cadmium in cocoa powder sold to the final consumer is 0.60 mg/kg. Ask your supplier for recent laboratory reports, not just a declaration.
